Low Carb Taco Casserole
Anyone else love tacos?
This Low Carb Taco Casserole is a great way to mix it up! Try out this casserole and enjoy!
10 oz of Frozen Cauliflower Rice
2-3 Tbsp Oil
2 pounds Ground Beef
4 Tbsp Taco Seasoning
3 cups Shredded Colby/Jack Cheese
1 small Red Bell Pepper
1 small White Onion
1 Tbsp Tomato Paste
1/2 c Water
1 c Sour Cream
Sliced Black Olives
Salsa – Hot Sauce
Preheat oven to 350ºF
• Pan fry the cauliflower rice in oil over medium/high heat until browned. Transfer to greased casserole dish and spread in an even layer.
• Brown ground beef with red pepper and onion over medium/high heat. Drain excess fat if necessary then add taco seasoning, 1 small can of tomato paste and Stir - Transfer to casserole dish in an even layer on top of cauliflower rice.
• Top with shredded cheese and bake for 10-15 minutes.
• Remove from over and Spread sour cream over the top. Sprinkle with extra shredded cheese and any other taco toppings you choose above!
